½ lb. sausage, *optional
1 (8oz.) package cream cheese
1/2 (16 oz.) package Velveeta, *See notes below
½ cup sour cream
2 (10oz.) can Rotel Tomatoes,
1 un-drained and 1 drained
pepper to taste
*After adding all the ingredients, if
more spice or flavor is needed add
1/2 c. of your favorite Salsa and
some Cholula and/or Smoked
*This recipe calls for 8 oz. of Velveeta but you can add up to 12 oz., if desired.
In a medium skillet or Instant Pot, brown sausage and drain fat.
Add cream cheese, Velveeta, and Rotel to skillet. Cook on low until cheese has melted. Stir in sour cream. Add pepper to taste.
Set Instant Pot to Warm and serve with tortilla chips. Stir mixture every so often to make sure it is not burning on bottom.
This can also be made in a crock pot.
