1 tsp. vegetable oil
1 garlic clove, minced
½ tsp. ground ginger
1 ½ lbs. ground turkey
2 T. soy sauce, low sodium
1 tsp. Sriracha Sauce
6-8 romaine lettuce leafs
dry roasted peanuts, minced (garnish)
*Optional veggies that can be added to this recipe: shredded cabbage, water chestnuts, onions, celery and/or carrots.
This recipe was created by Susan Evans, a dear friend of mine.
Saute garlic in skillet with hot oil. Add ground turkey, soy sauce, ginger and chile garlic sauce. Cook until turkey is brown and crumbling apart and sauce is slightly reduced. Drain any remaining liquid.
Serve in lettuce leaves and sprinkle peanuts over each.
