INGREDIENTS
2 1/2 c. flour 1 1/2 tsp. baking powder 3/4 tsp. salt 1 c. sugar 8 drops green food coloring 3/4 c. vegetable oil 2 eggs 1 tsp. peppermint extract 1 1/2 c. semi-sweet chocolate morsels

Christine got this recipe from a wonderful college friend, Julie Janak. I think they both still make them every Christmas.
DIRECTIONS
Preheat oven to 350 degrees. In small bowl combine flour, baking powder and salt; set aside. In large bowl, combine sugar and vegetable oil; mix well. Beat in eggs and peppermint extract.
If using food coloring, beat in now. Gradually add flour mixture. Stir in chocolate chips.
Drop by rounded teaspoonfuls (small bite sized) onto ungreased cookie sheet. Shape into balls.
*Optional: roll in approximately 1/2 cup granulated sugar.
