Diana and Corine, Jerry’s sisters
were nice enough to share this wonderful family recipe. We
laughed the entire time they were making it. Such a great alternative
to traditional spaghetti with
tomato sauce.
Add 1 T. oil to saucepan and sauté onion until translucent. Add ground beef and brown with onion making sure not to over brown.
Lightly toast Fideo in 1 T. oil in another saucepan over medium heat. Continue to cook until noodles are golden brown, about 3-5 minutes.
Add beef/onion mixture, garlic powder, bouillon, potatoes, tomato sauce and water to fideo. Stir mixture, cover and simmer 30-45 minutes over medium-low flame.
Taste and adjust seasonings with salt and pepper. Serve with hot flour tortillas and beans.
*Optional add-ins: 1 jalapeno, green bell peppers and/or 1/8 tsp. ground cumin
