Instant Pot Sausage and Butter Potatoes

1/3 c. hot water
1 – 1.5 lbs. golden potatoes, scrubbed
     and cut into 1.5″ chunks
1 pkg. Eckrich Beef Skinless Smoked
     Sausage, cut into bite sized chunks
2 T. butter, cut into small chunks
1/4 heaping tsp. salt
1/8 tsp. ground pepper
2 tsp. Hidden Valley Ranch seasoning
*optional: garnish with fresh parsley


DIY Ranch Seasoning Mix
Makes: 3 T. mix

1 T. dried parsley
1 T. dried dill
2 tsp. garlic powder
2 tsp. onion powder
½ tsp. salt
1 tsp. black pepper

Stir together all spices. Store in an airtight container for up to 1 year.

  1. To make ranch yogurt dip: Combine 1 teaspoon ranch seasoning with ½ cup plain yogurt.
  2. To make ranch dressing: Combine 1 tablespoon ranch seasoning with ¼ cup mayonnaise, ¼ cup buttermilk, ¼ cup plain yogurt and 1 teaspoon lemon juice.


Add the hot water, potatoes, sausage, butter, salt, pepper, and Hidden Valley Ranch Seasoning to the Instant Pot. Close lid and cook at high pressure for 8 minutes. After the pressure cycle is complete, allow to naturally release for 10 minutes then initiate a quick release.
