Fresh Salsa

 Serves: 3 cups    |     Prep: 10 min     |     Ready: 10 min


1 (14.5 oz. can) diced tomatoes
1 (10 oz. can) diced tomatoes with
     green chiles, juice drained
3 cloves garlic, crushed
1/2 onion, roughly chopped
1 jalapeno, seeds removed
1 tsp. honey
1/2 tsp. salt
1/8-1/4 tsp. pepper
Juice from 1/2 lime


*Optional: 1/4-1/2 cup cilantro can be added


Drizzle onion pieces with olive oil and roast under broiler or on grill until browned.

Add roasted onion, jalapeno and garlic to the food processor and pulse until chopped into small chunks.

Add in the tomatoes and continue to pulse just until blended. Add in honey, salt, pepper and juice of 1/2 lime then pulse in the processor to desired consistency. Chunky or smooth. Taste and adjust salt, pepper, honey or lime juice as needed.
