2 slices bread
2-3 tsp. butter for pan grilling
1-2 slices ham
1-2 oz. sliced fresh Mozzarella cheese*
2 Compari tomatoes, sliced
1- 1 1/2 T. pesto sauce
salt and pepper to taste
*If fresh Mozzarella is not available you can sub with sliced Mozzarella as long as it is melts creamy not stringy.
Melt butter in skillet over medium heat. Add bread to coat 1 side of each slice with melted butter. Remove pan from heat.
Spread pesto sauce over 1 slice of bread then top with tomatoes, salt, pepper, ham and cheese. Top with other slice of bread buttered side out. Return pan to heated burner.
Heat evenly for about 2-3 minutes. Flip to heat other side for 2-3 minutes. Flip again pressing down to distribute heat until golden brown. Flip again to repeat on other side. Should be golden brown over entire surface to achieve deisred crunchy texture.
Slice and serve immediately.
