Serves: 16 | Prep: 15 min | Cook: 25 min | Ready: 40 min
1 lb. mini carrots3 T. butter2-3 T. maple syrup*2-3 T. brown sugar**adjust syrup and sugar as per taste
Boil carrots in salted water until fork tender, about 15 minutes.
Drain and move carrots to side of pot.
Add rest of ingredients and blend until smooth. Gently fold sauce into carrots.
Serve.
