Steamed Carrots with Honey and Ginger

INGREDIENTS

1 lb. carrots, peeled and sliced
1 T. honey
1 tsp fresh ginger, grated or 1/8 tsp. ground ginger
1 T. olive oil
Salt to taste

NOTES

DIRECTIONS

Steam carrot slices until tender, about 10-15 minutes. Steaming really makes a difference in the taste. Easiest way is with a vegetable steamer basket placed in regular pot.

In a small bowl, whisk together honey, ginger, and olive oil. Toss the steamed carrots with the honey-ginger mixture.

Season with salt to taste. Serve warm.
