Wilderness Chili

INGREDIENTS

3 lbs. chili meat/ground beef
1 onion, chopped
2-3 cloves garlic, minced
2 T. oil
Worchester Sauce, to taste
dashes of salt & pepper to meat
1 can Rotel
2 (8oz.) can tomato sauce
1 can chopped green chilies
1 tsp. salt
1/2 tsp. pepper
2 T. chili powder
1/4 tsp. cayenne pepper

NOTES

*You can simmer this chili on low for  two to three hours, just make sure you keep adding water if it seems to be drying out of liquid.

DIRECTIONS

Heat oil in stock pot then add onion. Saute until translucent. Add minced garlic and continue to cook until fragrant. 

Incorporate meat with onion and garlic. Add a few dashes of Worchester Sauce and salt/pepper to taste. Cook until meat is cooked but not crispy.

Drain any excess oil. Stir in Rotel, tomato sauce, green chilies. Add all spices and combine. Taste and adjust spices to your preference.

Simmer for at least 30-45 minutes. Continue to add water if needed.

*Optional: top with cheese, sour cream, jalapenos, avocados or chips.
