Weber Texas Chili

INGREDIENTS

3-4 slices bacon, cut into small pieces
1  1/2 c. onion, minced
2 T. minced garlic
2 lbs. ground beef chuck for chili
3 T. chili powder
1  1/2 tsp. cocoa powder, unsweetened
1/2 c. brewed coffee
1  1/2 c. beer
3 c. beef bouillon
*Do not add salt when cooking, add once served if needed

NOTES

DIRECTIONS

Saute bacon in cast iron dutch oven. When lightly browned remove and set aside. 

While bacon is cooking, chop onion, then saute in bacon grease until transparent. Add garlic and cook 2-3 minutes longer.

Add beef and sear until light brown. Once browned add rest of ingredients.

Bring to a soft boil then lower heat and simmer, uncovered for 1 hour or so.

Serve topped with grated cheese, sour cream and other desired toppings.
