4 c. green cabbage, finely shredded1 large apple, julienned or thinly sliced1/2 c. dried cranberries1/4 c. carrots, grated1/4 c. sliced almonds
Dressing1/2 c. mayonnaise2 T. apple cider vinegar1 T. honey1 tsp. Dijon mustard or Koopssalt and pepper to taste1 T. poppy seeds, optional
In a large mixing bowl, combine the cabbage, apple, cranberries, carrots and almonds.
In a small bowl, whisk together the mayo, vinegar, honey, mustard, poppy seeds*, salt and pepper until smooth and creamy.
Pour the dressing over the cabbage mixture and toss until everything is evenly coated.
Cover the coleslaw and refrigerate for at least 30 minutes. Give a stir before serving.
