2 large eggs 1/4 c. cottage cheese 1 tsp. olive oil or butter salt & black pepper, to taste Optional: fresh herbs, a pinch of paprika or garlic powder

Preheat the oven to 350°F
Lightly grease a small baking dish with oil or butter. Spread the cottage cheese evenly over the bottom of the dish.
Carefully crack the eggs over the cottage cheese. Season with salt, black pepper, and optional spices.
Bake for 15–20 minutes, until the egg whites and the yolks are set. Serve immediately, garnished with fresh herbs if desired.
Helpful Tips:Use a small baking dish to keep the eggs from spreading too much. Try to use a dish small enough to cracked eggs will cover the cottage cheese entirely. Choose cottage cheese with medium or full-fat for a creamier texture.
Add a small amount of shredded cheese on top for extra richness.
